HOMECOOKED DINNER

Have tried and tested some good online recipes.  So I thought good things must share! :-)  Here you are, some easy recipes which are genuinely tasty.  Have cooked it twice already.

Chicken and Mushroom Oven-baked Rice

Bacon wrapped with Enoki mushroom

 

INGREDIENTS:

  • Streaky bacon strips
  • Enoki mushrooms (roots chopped, washed and seperate into bundles)
  • Toothpicks or satay-sticks (wet with water)  [soak the toothpick /stick in water so they don’t burn in the oven]
  • Homemade basic teriyaki sauce {recipe taken from}

METHOD:

  • Preheat oven to 200 deg cel.
  • Wrap a bundle of enoki mushroom onto the bacon, roll slightly diagonally so that can cover more mushroom.  Cut at the end of wrap and trim-cut mushroom ends.  Continue.
  • Wet/Soak sticks.  Poke 4-5 wraps in a stick.
  • Optional step:  Brush teriyaki sauce marinade onto the wraps
  • Lay a layer of aluminium foil on top of baking tray.  Put all bacon wrapped enoki mushrooms on the tray and put into oven for 10min, turn the sticks once, and continue to bake for another 12mins.  When you see the bacon ends are sizzling, it’s almost done!
  • Serve in sticks or line them in rows on plate

Phyane’s version of  Teriyaki sauce:

1/4 cup of sugar + 2 Tbsp light soy sauce + 1/2 tsp dark soy sauce + 1 Tbsp sweet rice wine (HuaTiao Jiu), stir and heat up in microwave so that sugar can dissolved.

Be generous with the enoki mushrooms cos after grilling, bacon & mushroom will shrink.  Enjoy the food!
